greek pizza



- whole wheat pizza dough (let rise at room temp for 15-20 minutes)
- 1/2 red bell pepper (diced)
- 1/2 red onion (sliced thin)
- marinated artichoke hearts (diced)
- kalamata olives (pitted and sliced thin)
- 1/2 cup shredded mozzarella and 1/3 cup crumbled feta
- extra virgin olive oil
optional: red pepper flakes

preheat oven to 425 degrees. lightly flour surface and rolling pin. roll out pizza dough until very thin (1/8 inch). spray a large baking or pizza sheet with non stick spray and transfer the dough to the sheet. brush the dough with olive oil, pierce several times with a fork, and bake for 7-8 minutes. while crust is baking off, prepare remaining ingredients. remove partially baked crust from the oven and flip the crust to the other side. drizzle with more olive oil and add vegetables in an even layer. add cheese to cover. bake 20 minutes until crispy and brown on top. add red pepper flakes and drizzle additional olive oil if desired.
