"cold drip" coffee

The current issue of In Style has a feature in their Life, etc - problem solved section titled Make The Perfect Iced Coffee at Home! I've tried many methods of making iced coffee at home before, but am always disappointed with the either too watery, or too bitter, result. So here's something I will try this weekend - the "cold drip" method. Instead of using a coffee maker to make hot coffee first, this method has you soak 3/4 of a lb.  of course ground coffee in 8 cups of cold water overnight in the fridge. The next day, strain the grinds through a fine sieve (cheese cloth, paper towel might work too), and into a pitcher. The result should be 24 servings of very strong coffee concentrate that can be refrigerated for up to 2 weeks. Serve over ice (or ice that has been made out of the coffee concentrate itself) with milk/cream/etc. and sweetener as desired. The article also gives tips on what beans to buy (micro-lots) and what type of water to use (to get the best flavor, use filtered tap or bottled water, not regular tap, which is usually chlorine-heavy and yield a less sweet, more bitter tasting bevy).

This weekend I'll pick up some freshly ground beans at Polcari's, and let you know how it turns out!
