I love mexican food - especially homemade, chunky guacamole. We made a version of this recipe up a while back and I make it at least once a week. Tonight we had turkey burritos and this was the perfect topping.
Here's what you'll need (makes 1 - 1 1/2 cups):
- 1 large, ripe avocado
- 1/2 large, ripe tomato
- 1 tbsp sweet onion, minced
- 1 small garlic clove, minced (or about 1/2 a large one, depending on how much garlic you like)
- 1/2 lime
- salt and black pepper
Cut the avocado in half and remove the pit. Scoop out each half and cut the avocado into small chunks. Place avocado in a medium-sized bowl and add the juice of 1/2 lime to prevent it from browning. Cut tomato into similarly sized chunks and add to avocado along with onion and garlic. Mix well. Add a tiny bit of salt and a few grounds of black pepper to taste. You're done!
notes: I didn't have any cilantro in the fridge tonight, but when I do I like to add a little bit to this. If you're like my boyfriend and like your guac really smooth, mash the avocados really well before adding the other ingredients - it's delicious either way! Guacamole is best served immediately, but if you need to store it for a bit just wrap it well with plastic wrap (no air between the guacamole and wrap) and refrigerate.
