(an early) cocktail hour

Mimosas are a great way to get your OJ in the morning - especially during the summer when it's okay to start drinking at 9 am on the weekends! I was excited when I found this recipe because the watermelon gives it a nice twist.

This recipe (+ images) is from the beautiful website, Laylita's Recipes. Check it out for more fun drink ideas.

watermelon mimosa

- 1 quarter of a large watermelon (about 5 cups cut into small pieces)
- 2 cups fresh squeezed orange juice
- 1 bottle chilled champagne (Prosecco or other sparkling wine)
- sugar to taste
- mint (for garnish, if desired)

blend the watermelon chunks with the orange juice and sugar to taste until you have a smooth puree (strain if needed). chill the watermelon and orange mixture in the refrigerator until ready to prepare drinks. pour the mix into champagne flutes, about half full. add the champagne or sparkling wine. stir lightly to combine and garnish with a fresh sprig of mint.
