a super summer salad

This salad combines three of my favorite ingredients for summer - tomatoes, goat cheese and basil. I think it would make such a pretty and light dinner starter.

tomato, goat cheese and basil salad

- 1/2 cup packed fresh basil leaves, plus more for garnish
- 2 tbsp olive oil
- 2 tbsp white-wine vinegar
- coarse salt and ground black pepper
- 3 oz fresh goat cheese
- 3 medium (heirloom) tomatoes, cored and sliced crosswise (1 inch thick)

in a blender, combine basil, oil, vinegar and 1 tbsp water. blend until smooth. season with s&p. thinly slice cheese with dental floss or a warm knife. arrange tomatoes and cheese on a plate and drizzle with basil dressing and garnish with additional basil leaves.
