a little bit of cooking... finally!

Ever since I posted about mini spinach and ricotta pizzas I have been thinking about making pizzas with pita bread. I decided to try a whole wheat pita with artichokes, kalmata olives, sliced sweet onion, feta, shredded mozzarella and olive oil to make a greek-inspired pizza. I baked it at 400 degrees in the toaster oven for about 15-20 minutes, until the pita was nice and crispy. Super easy and so good. How have I lived without a toaster oven until now?
