this month's issue of cooking light feautures so many delicious recipes, many containing seafood as the main ingredient. as a new englander i cannever have enough fish so i was very excited when i received this issue in the mail! here is one of the recipes that really stuck out to me because i love the ease of making a sandwich for dinner.

halibut sandwiches with spicy tartar sauce

2 tablespoons all-purpose flour
1/2 teaspoon salt
1/2 teaspoon ground coriander
1/8 teaspoon black pepper
4 (6-ounce) skinless halibut fillets
1 tablespoon olive oil
1/4 cup canola mayonnaise
2 tablespoons dill pickle relish
1/8 teaspoon ground red pepper
4 (2-ounce) kaiser or sandwich rolles, toasted
8 (1/4-inch-thick) tomato slices
4 (1/4-inch-thick) red onion slices

- combine first 4 ingredients in a shallow dish. dredge fish in flour mixture, shaking off excess.
- heat a large nonstick skillet over medium-high heat. add oil to pan; swirl to coat. add fish to pan; cook 3 minutes on each side or until fish flakes easily when tested with a fork.
- while fish cooks, combine mayonnaise, relish, and red pepper. spread about 1 teaspoon mayonnaise mixture over cut side of each roll half. layer 2 tomato slices, 1 onion slice, and 1 fillet on bottom of each roll; top with top halves of rolls.
