-3/4 cup unsalted butter
-1 cup granulated sugar
-3/4 cup milk
-1 egg
-1 3/4 cup + 1 tbsp all purpose flour
-2 1/2 tsp baking powder
-1/2 tsp salt
-1 cup fresh, frozen blueberries
preheat oven to 400 degrees. cream butter and sugar in a large mixing bowl. add milk and egg and beat until smooth. in a separate bowl, sift 1 3/4 cup flour with baking powder and salt. add the flour mixture to the wet ingredients, mixing by hand until ingredients are well incorporated. toss blueberries with 1 tbsp flour to coat. fold blueberries into the batter. fill well-greased muffin cups 2/3 of the way with the batter. sprinkle sugar on top if desired. bake 20 minutes until cooked through and slightly golden on top.
