I love delicious cocktails and have been wanting to celebrate cocktail hour here at b & r for a while now. I'll try to do this every Wednesday as a 'hump day' treat. Lately I've been loving tequila (don't ask me why) so here is a recipe I saw on the food network (via Bobby Flay) that I have been dying to try. It makes me grateful that summer is just around the corner.

white peach and silver tequila cocktail
- 2 ripe white peaches, pitted, peeled and chopped
- 1/4 cup silver tequila
- 1/4 cup peach liqueur
- 1/4 cup fresh squeezed lime juice
- 2 tbsp simple syrup (this is optional, I would substitute a splash of lemon lime seltzer or soda)
- ice cubes
- sliced peaches/mint for garnish if desired
use a blender or food processor to process the peaches until smooth. pass the peaches through a mess strainer to remove pulp. combine the pureed peaches, tequila, liqueur, lime juice, and simple syrup in a blender and blend until smooth. serve over ice. garnish with peaches/mint/lime peel if desired.
